High Evolutionary getting curbstomped by the Guardians and then getting imprisoned and his face ripped is karmic for basically tormenting Raccoon's life and being an egotistical prick
Tears of the Kingdom's Ganondorf, definitely. The explosion gave me chills.
Vader's death was satisfying not because I disliked him, but because it wrapped up his character brilliantly, with him finally returning to the light.
Pretty much all of the God of War bosses have a satisfying death, so kudos to Kratos for that.
On an additional note, probably the funniest villain defeat would be Vincent Vega. Great character, don't get me wrong, but its funny how his defeat happened so humorously, only for the next scene in Pulp Fiction to be (in my opinion) one of the most disturbing movie scenes (if you know you know).
On that note, Zed and Maynard's defeats were also satisfying.
Emperor Belos went from manipulating everyone to pathetically bumbling on the ground while he tried to think of a reason for Luz to spare him. Pure poetic justice.
Judge Claude Frollo getting plunged into hell,

Darth Malak from Knights of the Old Republic. Gloated about how the Star Forge made him so powerful, yet he gets his arse handed to him by Revan Reborn. He was an idiot.
Sebastian Shaw in X-Men: First Class. Loved how Erik used his own words against him. And used Shaw's own prized coin to kill him. That was a long time coming.
Knull in the King in Black run. Star-Lord's quip was brilliant. This picture says it all. While Star-Lord didn't kill Knull, he did leave the latter in a severely weakened state, and barely alive.
